The ratio of millet flour to wheat flour depends on the type of pastry; it cannot always be applied in a 1:1 ratio. In pastries and pancakes, up to 40-60% of wheat flour can be replaced with millet flour, but for bread it is advisable to use at most 30%, because in larger proportions it reduces the volume of the dough and does not maintain the necessary texture as well. For gluten-free baking, you achieve the best results by mixing millet flour with rice flour or other gluten-free flour.
What is the difference between millet flour and rice flour?
The two flours have similar uses, but their nutritional profiles differ. Valoryz organic millet flour contains approximately 14.4 g of protein and 8.1 g of fiber per 100 grams, while brown rice flour typically contains 6-8 g of protein and 5-7 g of fiber in the same amount, so millet flour is richer in both protein and fiber.
